So, what was I thinking…. it’s in the mid 90’s and I decide to make risotto. The recipe was in the Washington Post Wednesday July 14th. Asiago and Corn Risotto. I have never made risotto before so I thought how hard could it be.
Risotto is not hard but you have to stir the risotto constantly. So it did get a little hot. Standing, stirring, stirring and then stirring some more. The risotto did come out creamy and it was very good. It was very cheesy. I even juiced the carrots to get fresh carrot juice for the recipe.
I would have this again and I would definitely make risotto again.
